We started with carefully sourced coffee from the world’s best-growing regions and then selected the most exciting lots to be roasted in our facility. From there, the roasting team developed a process that highlights the full potential of specialty coffee.
From the Valle del Cauca highlands outside Cali, Colombia is one of the country’s most prominent micro-regions, producing an exquisite selection of Arabica coffee. The Golden Roast Coffee Roasters has pronounced notes on the front end but drops into a slightly more acid finish characterized by a lingering, rich black cherry flavor.
This Colombia Cup of Excellence coffee comes from farms situated at an elevation of 1300 meters. The wet season begins in February and ends in May, with constant heavy rain. Rainfall during flowering helps to stimulate pollination, therefore allowing farmers to pick more cherries per plant. After harvest, the cherries are cleaned for post-fermentation then they begin a natural process of drying on raised patios at face level. Farmers have three months to wait for full maturity and peak flavor during the drying phase before picking the cherry.
